1 Spray a large, ovenproof, non-stick frying pan with low-calorie cooking spray and place over a medium-high heat. Add the sausages and cook until evenly browned.

2 Preheat your oven to 180°C/ fan 160°C/gas 4. Add the onion to the sausages and cook for 5 minutes, or until soft. Stir in the chipotle paste, beans and tomatoes, and simmer for 15-20 minutes until thickened.

3 Make 4 wells in the mixture and crack an egg into each one. Cover with foil and bake for 15 minutes, or until the eggs are set.

4 Season to taste and divide between 4 bowls or plates, serving 2 sausages and an egg per person. Scatter over the parsley and serve with fat-free natural fromage frais.
